The Mighty Healthy Wrap

What you need:

    8 small corn tortillas, warmed
1 large sweet potato, peeled and sliced
1 small avocado, peeled, pitted and sliced
    8 lime wedges
    1/2 small onion, finely chopped
    1 clove garlic, minced
    2 cups black beans, rinsed
3/4 cup frozen corn kernels, brought to room temperature
    1/2 cup fresh cilantro leaves
1/2 cup crumbled pasteurized feta cheese
    3 tablespoons olive oil
    1/2 teaspoon ground cumin
    1/4 teaspoon ground coriander
    1/8 teaspoon chili powder
Salt and ground pepper to taste

Place sweet potato slices in a rimmed baking sheet then add 2 tablespoons olive oil, chili powder, salt and pepper. Toss to coat then bake in a pre-heated oven (425 degrees Fahrenheit) for 15 minutes or until tender. Heat remaining olive oil over medium heat in a pan then add onion and garlic. Cook until tender, about 5 minutes, then stir in beans, cumin and coriander. Cook until heated through. To make the wrap, divide and pile roasted sweet potato, beans, avocado, corn, cilantro leaves and cheese among corn tortillas. Drizzle each with a lime wedge.

Ultimate Comfort Bowl

What you need:

7 red potatoes, peeled, quartered and boiled
2 links smoked beef sausage, sliced into 1-inch pieces, cooked
    2 cloves garlic, minced
1 bunch asparagus, stemmed and chopped
    3 cups beef broth
    2 cups broccoli florets
2 cups frozen sweet white corn
    1/2 cup milk
    3 tablespoons all-purpose flour
    2 tablespoons butter
Salt and ground black pepper to taste

Place boiled potato quarters, garlic, milk and butter in a large bowl. Using an electric mixer, blend mixture until creamy. Transfer into a large bowl and set aside. In a large pan over medium heat, combine cooked sausage, asparagus, broccoli, corn and broth. Simmer, covered, until vegetables are cooked through, about 5 minutes. Scoop about 1 cup of the broth into a bowl and mix with all-purpose flour. Return to pan with vegetables. Stir until sauce thickens. Pour sausage and vegetable gravy mixture over mashed potatoes and serve.
